Stir Fry
Basically you can make this
with any left over meat and vegetables.
I make it from scratch as follows:-
Serves 2
- 1 Chicken Breast (skinned and sliced
fairly thin)
- 6 oz Fresh Prawns (you can use
frozen ones making sure they are well defrosted)
- 1 Large Onion (sliced)
- 2 cloves Garlic (crushed)
- ½ Green Pepper (seeded and sliced)
- ½ Red Pepper (seeded and sliced)
- 6 oz Mushrooms (sliced)
- 2 sticks Celery (chopped)
- 1 small can Chopped Tomatoes
- Salt and Freshly Ground Black Pepper
- 1 tablespoon Dark Soy Sauce (or to
ring the changes you could use Chilli Sauce)
- 1 teaspoon of Mixed Herbs
- 2 tablespoons oil
- 1 small carton of Greek Yogurt
- Paprika to garnish
Pour the oil in a large pan or wok
add the onions and garlic cook for a couple of minutes then add the chicken, cook until
browned, then add the prawns and cook for further minute, stirring well. Then add the
peppers, mushrooms, celery and the mixed herbs, cook for about 5 minutes stirring well,
then add the chopped tomatoes, salt and pepper and the soy sauce, cook for a further
minute or until the tomatoes are heated through.
Serve the Stir Fry with about a
tablespoon of the yogurt on each serving sprinkled over with Paprika.
