Smoked Fish in a Tomato Sauce

For 2 people

Quickly fry the onion and garlic together on a high heat until sealed, add the chopped tomatoes stir well together. Bring to a simmer, place the fish on top of the sauce, cover the pan and cook for 5/10 mins until fish is cooked through.

Poach the eggs

Serve with the eggs on top and the crusty bread to mop up the juices.

Can be served with Brown Rice
