Sicilian Pork and Mushrooms

Serves 4

Fry garlic and mushrooms in hot oil for 5 mins. Remove with a slotted spoon and set aside.

Dust the pork in the flour and add to the pan with the butter. Turn up the heat and cook for 1 min on each side. Add Marsala wine and pepper.

Return mushrooms and lower heat for a few mins, be sure pork is thoroughly cooked.

Sprinkle with chopped parsley.

Can be served with Pasta, Rice or Vegetables of your choice.
