tbsp vegetable oil
1kg/2lb
chicken breast fillets - skinned and cubes
1 onion – sliced
4
oz mushrooms - finely sliced
1
pint Balti sauce (made previously)

green beans – cut into 4cm/1.1/2in lengths
350g/12oz
firm tomatoes – chopped
15g/1/2
oz fresh basil – roughly torn

Heat
the oil over a high heat in a large pan and stir fry the chicken for about 5
minutes until golden brown. Add the
onion and continue to stir fry for about 5 minutes, add the mushrooms and stir
fry for a couple of minutes. Pour in the Balti sauce and add the beans.
Bring to the boil and simmer gently for about 10 minutes, stirring
occasionally.
Stir
in the tomatoes and basil and cook for a further 2/3 minutes or until the
chicken is tender.
Taste
and adjust seasoning before serving.
