Meatloaf with a Tasty Topping

Ingredients

Mix the Loaf

Preheat the over to fan 160c /conventional 180c / gas 4

Tip the beef, onion, egg and breadcrumbs into a large bowl, followed by half the mushrooms and bacon. Crumble in the stock cube then spoon in the ketchup.

Season really well, then thoroughly mix everything.

Press the mixture firmly into a 1kg non-stick loaf tin and bake for 30 minutes

Make the Topping

Mix the remaining bacon, mushrooms and the grated cheese to make the topping

Top and Bake

Once the loaf has baked for 30 minutes, take it from the oven and pour off any liquid that has collected in the tin. Scatter over the mushroom mixture and return to the oven for 20 minutes until golden brown. Cool for 5 minutes, then loosen the sides with a knife and carefully turn out from the tin. Serve cut into generous slices.

If you want to serve the meatloaf later, keep in the tin, cover and chill for up to 2 days.

Serving suggestions

Salad and new potatoes: Mash, vegetables and gravy or baked beans, grilled tomatoes and bread
