Marinated
Mackerel
Serves
2 (Adjust quantity to serve more)
2x250g/9oz
mackerel – cleaned and filleted
1
tbsp honey
½
tsp chilli powder
½
tsp grated fresh ginger
2
tbsp vinegar
¼
pint fish stock
2
medium carrots – cut into matchsticks
2
celery sticks – cut into matchsticks
4
spring onions – sliced or a small onion finely sliced
Place
fish in ovenproof dish
Mix
together honey, chilli powder, ginger, vinegar and stock.
Pour over fish.
Scatter
vegetables over fish, cover and refrigerate for about an hour.
Before
placing in oven tip the dish to the side and spoon the marinade over the
vegetables.
Bake
at 190C/375F/Mark 5 for 30 minutes.
Serve
with mashed potatoes (mash potatoes with a knob of butter, egg and chopped
chives)
