Garlic and Herb Roast Potatoes

Serves 4

Preheat oven to 180c/350f/gas 4

Place the potatoes in a large pan and cover with cold water. Bring to the boil and cook for 5 minutes. Drain and cool, scrape all over with fork to roughen the surface. Toss in the mustard powder and sprinkle with salt.

Place the oil in a roasting tin for about 5 minutes or until the oil is sizzling hot and nearly smoking.

Add the potatoes to the oil with the herbs and garlic. Return to the oven and cook for about and hour or until potatoes are crisp and golden.
