Fluffy Mushroom Omelette

For one person

Cook the mushrooms and garlic in the oil until softened, then add the whisked eggs, cook until almost set    (whilst this is cooking turn on the grill so it is ready to put the omelette under)

Then put the grated cheese on top sprinkle with paprika and put under a moderate grill, cook until it bubbles up and the cheese is nicely browned.

Serve with a side salad
