Cornish Pastie
Serves 4
Ingredients
2
Blocks puff pastry
1 spanish onion
2 carrots
2 large potatoes
700 grms minced lamb
1 tbsp chopped parsley
1 bayleaf
1 tsp dried rosemary
2 rashers bacon
Splash of olive oil
Fry
the onion, carrots and bacon for 5 minutes at medium heat - then add all the
other ingredients. Cook for 10-15 minutes - add water if too dry.
Cut
9" rings out of the puff pastry and place a portion of the filling into the
middle. Fold over and crimp edges with fingers. Brush with beaten egg and bake
at 200c for 20 minutes until golden brown.
Roasted vegetables:
2 parsnips
2 tomatoes
2 courgettes
4 mushrooms
Onion
Cut
the vegetables in half and place on a baking tray and drizzle with olive oil and
bake in a moderate oven for 40 minutes until golden brown.
Serve
Pastie with roasted vegetables and side serving of sour cream.
