Bread Pudding

Break bread up in a bowl and cover with water, leave to stand for 30 mins

Squeeze all water out of bread and crumble into a bowl

Add sugar, suet, spice, fruit juice, rind and eggs

Stir well to mix, it should be like the dropping consistency of a fruit cake. Add a little milk if necessary

Pour into a greased roasting tin

Bake at 180c(350F) Mark 4 for about 1 ½ hours or until firm to touch.

Leave to cool for a while then cut into squares
